For me, fall is soup season. Last year I shared some of my favorite fall soup recipes, and this year I am adding chilled avocado soup to my recipe box. I haven’t made this soup yet, but I can’t wait to try it!
Benefits of Avocado
I love avocado on everything, toast, tacos, chili, as a snack with strawberries, in salads, and now this chilled avocado soup. Eating foods that are satiating and nutritious are very important to me. I can’t consume empty calories anymore. They don’t serve me, and they cause inflammation in my body.
Did you know avocado is a fruit? I didn’t! And they contain LOTS of vitamins and minerals such as vitamin K, C, B5, B6, E, Folate, and Potassium, small amounts of magnesium, copper, iron, zinc, phosphorous, and vitamin A, B1, B2, and B3, PLUS fiber! Avocado contains more potassium than bananas, which is linked to reducing blood pressure.
Avocados also contain lots of heart-healthy monounsaturated fatty acids. But eating this fruit with lots of fat in it isn’t bad for you; it can lower cholesterol and triglyceride levels. They are also good for your eyes and may help prevent cancer. Don’t those facts right there make you want to eat them? With all the screen time I have with my job; my eyes are tired.
Place the avocado, chicken broth, Tabasco, and lime juice in a blender or food processor.
Process until smooth.
Cover and chill for at least 1 hour.
Prior to serving, whisk the heavy cream and sour cream into the avocado mixture until combined.
Ladle the soup into 4 soup bowls, garnish with the fresh cilantro and serve.
Alternative Toppings You Can Add
To add additional protein to your soup, you can top it with shredded chicken, bacon pieces, or shredded crab meat. For a crunch add some sourdough croutons or scallions. Or add tomatoes
Non-Dairy Version Of Chilled Avocado Soup
If you’d like to make this recipe without heavy cream or sour cream, you can whip up all of the other ingredients in a blender and substitute them with non-dairy options. When mixed in the blender, the blender fills the mixture with air, making it thicker. If you want a thinner consistency, add more broth.

And this cocktail recipe combines many flavors of the colder months. This recipe is also great to serve up for the winter holidays!
How to Make this Spiked Holiday Sangria
Spiked Holiday Sangria
Simple, Red Spiked Sangria made with simple methods and just a few ingredients. The perfect fruity beverage that’s adaptable and delicious!
1 1.5Lbottle of sweet red wine (Sweet Red Blend by Barefoot)
1.5 - 2cupsbrandy – enough to cover the fruit
1canof seltzer or carbonated water (try one with a hint of lime)
1/4cupbrown sugar
4navel oranges
4gala apples
1/2lbs.red seedless grapes
1lemon
1lime
2cinnamon sticks
Instructions
Peel and dice the oranges, core, and dice the apples, and cut the grapes in half. Then slice up the lemon and lime and save half of each for garnish – set aside in a ziplock bag.
Marinade all the cut fruit (only a few lemon and lime slices – keep the rest aside) in a large bowl with the brown sugar, brandy, and cinnamon sticks. Let sit overnight in the fridge.
The next day, remove the lemon and lime from the marinade and add your sweet red wine to the brandy. Make sure you have a large pitcher.
To serve: put some mixed fruit and sangria in a glass with ice and use the slices of lemon and lime to garnish. Enjoy!
I have good news to share about my gut health supplements and how they have made a difference in my health. I’ve made some changes to what I eat and I have cut back on sugar. Since my last update, and working with my doctor I’ve lost 5 pounds. That may not seem like a lot, but I’ve modified my workout routine to include more weight training, so I’ve lost some weight, but I am also gaining muscle.

The Gut Health Supplements I Use
Caprylic Acid
My doctor recommended that I add the gut health supplement caprylic acid to my daily routine. I’ve never heard of caprylic acid before. It’s an acid contained in coconut oil. It can reduce candida yeast because of its antifungal properties. I am taking it so that it will kill the candida that has been found in my gut.
My doctor warned me that when you first start taking caprylic acid you may feel sluggish, headachy, or generally yucky due to the process of killing off the candida. I was worried that since I had a lot of it, I would feel that way. Thankfully, I had no side effects at all.
Fish Oil
If there is one thing I hated about fish oil pills, it was the fishy burps that come from taking them. I’m so glad I heard about iwi Omega 3 soft gels. I like this brand because there is zero taste, and zero fish burps! They are also 100% vegan, non-GMO, and gluten-free. These soft gels contain the DHA fatty acid and other omega-3s which all help the support central nervous system, brain function, and eye health.
Another reason why I like the iwi brand is that they give back. iwi does not remove fish or krill from the ecosystem to produce it. They avoid harming the ocean and the life within it, and as a non-profit partner they also give back 1% of their net sales to Ocean Unite, who are working to supercharge positive ocean action.
I just had my blood work taken since my last test was done 5 months ago and have had an incredible change in my triglycerides. The level has dropped from 497 to 135! All of this is done by taking fish oil and caprylic acid. My good cholesterol has gone up and my bad cholesterol has gone down significantly. I was very concerned when I learned in April that my triglycerides were that high.
Foods To Support My Gut Health
In addition to the supplements I have added to my daily routine, I’ve also stuck with a diet containing the following important foods. They include:
Salmon
Salmon is a staple in my diet. I eat salmon 4-5 times per week. I not only eat it for dinner, but I’ll have it as lunch before a run, or even as breakfast. Salmon contains protein, omega-3 fatty acids, vitamin B12, and vitamin D. These vitamins and nutrients lower your risk of cardiovascular disease, dementia, Alzheimer’s, and rheumatoid arthritis.
I love how easy and versatile it is to cook. My local grocery store, Big Y makes microwavable dinners with salmon, spices and seasoning, and vegetables in a special bag. All you need to do is microwave it for 4 minutes and you have a meal! I sometimes place this over rice or couscous and add coconut aminos. I often pick up several of these per week so I have a quick and easy go-to meal for any time of day.
Nuts
Nuts are a great snack to help regulate appetite and are great for your heart and brain. Like salmon, they are also a great source of protein. They contain fatty acids and arginine. Arginine is an important amino acid that your body produces, but can also be absorbed from food. Nuts like dried walnuts, almonds, and pine nuts are a great source of arginine.
Berries
Berries are one of the healthiest foods on earth! That’s great to know because I love berries and could eat them every day without getting sick of them. Berries are loaded with antioxidants and plant compounds that may reduce disease risk. Just like all of the items on this list, berries help control blood sugar levels. Berries are also loaded with fiber and are low in carbs.
Berries also have strong anti-inflammatory properties. Chronic inflammation leads to many issues such as heart disease, gut issues, diabetes, obesity, and pain.
Legumes
One of my favorite legumes is chickpeas. Legumes are an excellent source of plant-based protein. Some other popular legumes are lentils, peas, beans, and peanuts. They are an excellent source of fiber, protein, and Vitamin B. Legumes help reduce blood sugar, improve cholesterol levels, and in my case especially, they help maintain a healthy gut.
If you are looking to reduce the amount of meat in your diet, legumes are a very versatile, and excellent replacement. You can make stew, soups, and salads and add legumes for your protein rather than meat. One of my favorite snacks is hummus with cut-up peppers or even gluten-free pretzels.
Legumes are also a great source of fiber, which means they take longer to digest; so they are very effective in reducing the rise of blood sugar after a meal. This will also help you feel full longer. It also helps reduce the risk of diabetes and weight gain.
Lentils and chickpeas have been said to benefit gut health by improving bowel function and slowing the rate that the stomach empties. This also prevents a spike in blood sugar levels after a meal.
Yogurt
Yogurt is popularly known for its probiotic properties. The fermented milk contains live bacterias like bifidobacteria and lactobacillus, which improves digestive symptoms such as bloating, and irregularity.
I love the versatility and varieties of yogurt that I can find in the stores now. Since I am not eating dairy, I found some great yogurt replacements. Coconut yogurt is my favorite. Although it is not made with fermented animal milk, it is still good for your gut. Because coconut is already sweet, consuming coconut yogurt doesn’t have a lot of added sugars.
I also enjoy baking and making recipes with yogurt for things such as bread, dips, and smoothies. Yogurt is also a great snack or meal on the go when mixed with chia seeds, berries, coconut flakes, and nuts. Again, a perfect choice to eat without spiking our blood sugar levels.
Since I have modified my daily food intake to include many of the items listed above, I have been able to lose weight by feeling fuller longer, and also by eating the foods that help heal my gut, rather than irritate it. The reduction of sugar in my diet is a big bonus because the candida in my gut isn’t being fed by sugar – think of gasoline on a fire.

My new escape from reality is going to Block Island on the Ferry and spending the day cruising around the island. I’ve found some great family friendly things to do on Block Island that you can do as a day trip, or even better, spend a night and spread it out over a few days.
For the past few years I have wanted to take my family to Block Island to spend a day riding mopeds around the island. My kids are still young so they can’t do that yet; but I was able to recruit my mom to join me on my zany adventures.
Getting To Block Island
It’s easy to get to Block Island. We take the ferry out of Point Judith. On our first trip we took the traditional ferry which is a 55 minute ride across the ocean. The second trip we took the high speed ferry out to the island and the traditional ferry home.
Then, on our most recent trip where we brought the kids, we took them on the traditional ferry for the “experience”. Sometimes half the fun of a trip is the trip to the destination!
Shopping
Shopping is a good way to help support the locals on Block Island. And I always like to take home a piece of the island with me. There are lots of cute shops right in town as you disembark the ferry; and there are other shops also sprinkled around the island.
On both trips we shopped in the stores on Water Street and also found a cute shop on Corn Neck Road. On our more recent trip, we ordered sandwiches from Block Island Grocery to feed everyone before we started our hunt for glass floats.
Block island has a special event going on for local artisans it’s the Empire Emporium and it is open through Labor Day. It is located in the Empire Theater and is open from 10am -8pm every day. The emporium features locally handmade artisans and vintage wares!
Dining
There are a LOT of great restaurants along the island. You can select from Fine Dining at The Spring House, Restaurant 1879, or Winfields. Taverns and Nightclubs like Captain Nicks’, Pier 76 Dock Bar, Yellow Kittens Tavern. Along with casual dining and ice cream at Aldo’s Restaurant and Bakery, Block Island Oyster Bar & Grill, Dead Eye Dick’s, Dune & Bluffs, Island Pizza Company and so much more.
If you were to vacation on Block Island for the week, you will have no problem finding someplace different to try each night. So far since visiting, my mom and I have only eaten at the Mohegan Restaurant and Bar. The food there was amazing! I had a delicious seared tuna salad which hit the spot after a full day of exploring!
Beaches and Lighthouses of Block Island
Block Island has beautiful, beautiful beaches, and each of them are unique from one another. There are 17 miles of beaches on Block Island. Want to hunt for sea glass? Head north on West Beach to the North Point lighthouse. I hear it’s an excellent place to look for sea glass. I’m going to have to add this to my to-do list for my next visit to Block Island.
Want the beach all to yourself? It will take some hiking; but if you head out to The Painted Rock, you can go to Tom’s Point and Black Rock Beach. This is one of my favorite spots on Block Island. It’s the first place I took the kids once we arrived.
The views are amazing. The water is so clear and colorful, and you can see the Block Island Wind Farm. There are five large wind turbines out in the ocean that generates power for the island. It’s the first commercial offshore wind farm in the United States. It’s quite spectacular to see them in person.
There are also some beautiful lighthouses along the beaches of the island. The Block Island North Light is my favorite. It sits among the grassy dunes and stands so strong out on the tip of the island. The current building there now is the fourth lighthouse built on the site. The lighthouse tower is 55 feet tall, and was listed on the National Register of Historic Places in 1974. This light blinks white every 5 seconds.
There is also the Southeast Lighthouse that sits atop Mohegan Bluffs. It has been named a National Historic Landmark in 1997 and was moved 300 feet from its original location back in 1993 because of erosion of its original perch. This lighthouse tower stands 52 feet tall and flashes green every 5 seconds.
You can tour the lighthouse and shop in the giftshop during the summer. Tours are $10 for adults and $5 for seniors and children. You can visit the Southeast Lighthouse grounds with the views of the bluffs and the Wind Farm all year round.
Moped, Bike or Jeep Rentals
My absolute favorite thing to do is rent a moped and drive all around the island. I love the freedom of being in the open sea air, with the sunshine and the wind blowing. It’s the best! Second to that is renting a Jeep with a soft top. I’ve done both and love the different adventures each one provides.
Many mopeds are not allowed to drive on some of the dirt roads. But when we had a Jeep we were able to drive through to Black Rock Point. It’s great! You can go places that would otherwise take a long time to walk to, or can’t access with a moped.
You can also rent bikes on the island or bring your bike over on the ferry. I personally wouldn’t want to bring my bike unless I was staying on the island. Then I would enjoy riding into town or around the island to explore. But when we are on just a day trip, we want to cover as much ground as possible as we hunt for glass floats.
Old Harbor Bike Shop
We rented the mopeds and Jeep from Old Harbor Bike Shop. When you first get off the ferry there is a rep from Island Moped who flags you down and encourages you to rent from them. We first went to their shop; but we felt rushed and their tutorial for riding is done on loose gravel and we didn’t feel comfortable getting trained in a short time without practice.
We walked down the street and stopped over at the Moped Man lot and they walked us down to Old Harbor Bike Shop. We explained our experience at Island Moped to them and asked for some time to show my mom how to drive the moped and get comfortable with it before we decided to rent. Because we had such a great experience with them, we used them again to rent a Jeep. They were also gracious to give us off season pricing for the Jeep since we were visiting in October.
Boat Basin Rentals
When we returned in June with the kids, I didn’t plan enough time to book a Jeep reservation in the busy season through Old Harbor Bike Shop. I was lucky to get a reservation for their last Jeep through Boat Basin Rentals 401-466-5811. I highly recommend this company. They picked us up right at the ferry dock, and drove us to their place which us just 10 minutes from the dock. When we were done for the day, we were dropped off back in town wherever we wanted to go.
Moped Safety
One thing I need to share with you that is a very sensitive subject with residents of Block Island, is the danger of mopeds. Unsafe and aggressive driving is not tolerated, and you run the risk of getting fined or losing your driver’s license.
For more information visit blockislandmopeds.org. Be smart and mature about it. If you don’t feel comfortable driving the moped, then don’t. Find a different method of touring the island, whether it be on bike, via taxi, or car rental.
Hiking Block Island
I wouldn’t have thought of Block Island as a place to go hiking; but there are a lot of trails, parks and nature preserves on Block Island. There is the Nature Conservancy, Ocean View Pavilion, Rodman’s Hollow, Hodge Family Wildlife Preserve, Clay Head Nature Trail, Solviken Preserve, Sachem Pond, and Nathan Mott Park.
My mom and I have been to Ocean View Pavilion and Clay Head Nature Trail. And we took the kids to these places on our last visit also. My daughter especially loved the waves at the end of the Clay Head Nature Trail at Roiles Harbor.
I like the Clay Head Nature trail because of the beach location at the end, and also because much of the trail is shaded. So it’s great when hiking on a warm day. You can also download a copy of the Block Island hiking trail map which shows over 28 miles of walking trails open to the public. This is definitely something I will bring with me the next time I visit the island.
The Nature Conservancy
Block Island was named one of 12 “Last Great Places” in the western hemisphere in 1991. The island has rare plants and animals in it’s 2,000 acres of wildlife habitat that disappeared from the rest of Southern New England decades ago.
The Nature Conservancy site is a great resource to learn about nature walks and programs and events around the island for any age level. Some events they have are virtual and self guided walks, bird watching walks, night sky viewing, and nature walks to explore unique micro-habitats.
The Nature Conservancy and Block Island Conservancy also has kiosks located at Rodmans’ Hollow, Clay Head, Nathan Mott Park, Mohegan Bluffs and Ocean View Pavilion which lists updated scavenger hunts, nature sightings and local eco-updates.
I real had no idea there was as much conserved land around the island, and how many different activities you can do related to nature and conservation. The more I am researching about these activities, the more I want to stay an entire week on the island to explore and learn!
Orb Hunting on Block Island
I saved this for last because I didn’t want to let the secret out too soon. There’s kind of a secret club of people that lives for “orb hunting” or “glass float hunting” when they come to visit Block Island. There’s also a Facebook group dedicated to the search for the glass floats. So what’s this all about?
There’s a very talented glass blower who owns a shop in Wakefield, RI called The Glass Station. His name is Eben Horton and he has been blowing glass floats and hiding them all around the island. Why you ask? Why not? It’s a great way to encourage people to see more of the island. It gives you the opportunity to explore the nature preserves, the beaches, and hiking trails.

He also hides them around town in public places only. So if you don’t find one on the trails, you may find one in a flower bed right in front of one of the shops or restaurants! I haven’t been so lucky. My mom and I started orb hunting in September of 2020. I have friends who have been hunting for years with no luck. We don’t give up though! It just gives us another reason to plan our return trip back to Block Island. Read more about The Glass Float Project.

Writing this post makes me want to check my calendar for a day right after Labor Day to hop on the ferry and go orb hunting! My girlfriend Karen wants to go with me next and wants to rent mopeds! I will be watching the weather once the kids are back in school and we are going to run off and play on a great sunny day!

RunDisney races are coming back! If you haven’t heard already, then you must live under a rock! Not only that, they are coming back this November for Wine & Dine weekend. Do you all know what that means? Registration day is going to be INSANE! It also means it’s time to start training!
Along with the amazing news that RunDisney has finally bestowed to us, after teasing us on social media for the past few weeks, there are some changes for their return. I’ll share with you the changes you can expect in comparison to races prior to Covid-19.
runDisney Race Registration
Those of you who still have your Walt Disney World Annual Pass, or are a DVC member, you will no longer have an earlier registration date. The only people who will be granted early access are the runDisney Club Gold and Platinum members.
If you are not a runDisney Club member and you’d like to join, the registration period to join is currently closed. According to the runDisney Club page, the current membership term ends on September 30, 2022:
Club runDisney Membership is valid October 1, 2021 through September 30, 2022. Benefits listed expire on September 30, 2022 unless otherwise noted.
I am not a runDisney Club member, and at this point, and from what everyone is saying, it is enticing to want to consider it for the benefit of getting a better corral placement and the ability to register a week early for the races. However, the early registration option is only available for the Gold and Platinum memberships. The corral placement option is only available for the Platinum membership.

Travel Agent Packages
You can no longer book a race package through your favorite travel agent. All registrations have to be done by the individual runner. However, you can still book your rooms and park passes through your favorite travel agent. In fact, I would recommend you get on that ASAP!
From what I am hearing from my podcast friends, that the reason for not having travel agent packages is to entice people to register for runDisney club when it opens again for new members.
Charity Bibs
There is a lot of chatter in the Facebook groups about charity bibs. From what I have learned, there are requirements of the charities that they are unable to commit to at this time, so the charities that used to receive bibs for the races are not getting bibs for the upcoming races and for 2021.
Registration Dates
Registration is going to be a race in itself. With so many people chomping at the bit to get back to these races, the registration process will be similar to what it was back in 2014 and 2015 when registration day would cause as much stress as race day!

Proof of Time
This is a big concern for runDisney race participants. And it has been one of the reasons why I thought I had to register for a local half marathon as soon as we heard if runDisney was going to host races again. A proof of time is only required if you are going to run a half marathon under two hours. This was what was written for the Wine & Dine Half Marathon weekend.
The proof of time instructions for the full marathon has been shared in a few Facebook groups. I saw one that was requiring a marathon finish time of less than 4 hours and another showed a requirement of less than 5 hours. Either way, I don’t have the ability to run the races that fast, so my corral placement fate will fall into the hands of runDisney.
New Special Offerings
New Race Theme
There is a new race added to the line up. Instead of the Star Wars Dark Side Half Marathon weekend that took place in April, there is a new Springtime Surprise Weekend which will take place every March. Each year there will be a different theme for the races. Details are yet to be released for the 2021 races.
Sunrise Yoga!
I love yoga! Yoga in front of Cinderella Castle at sunrise? Sign me up! During the Princess Half Marathon weekend, there is a special event taking place on the first morning of the event weekend. Sunrise Yoga will take place before Magic Kingdom opens, led by a professional yoga instructor to help you get your mind and body prepared for the race weekend.

Changes For Race Weekends
Race Day Bib Pickup
Something I used to rely on in case of bad weather or a late flight before the races was race day bib pickup. RunDisney has now published that this option will not be available. Race bibs and shirts must be picked up prior to the day of the race. We are hoping that runDisney has announced that but will still have bibs with them on race morning in case of extreme circumstances, and they just aren’t sharing that the option is available.
Character Stops
The races will still have on-course entertainment; but it won’t be the same as in the past. Word on the street is that there will be “selfie stops” along the course to take pictures of characters from a distance. Very similar to how character interactions take places in the parks now.
Kids Races
The kids races are being modified and are not currently offered during the races posted for 2022. They have published a new experience for kids called the runDisney Kids Adventures; but no details are available at this time.
Spectators
At the time of this blog post, there isn’t a Chear Squad offered for spectators. RunDisney is still evaluating this experience option. One of the questions going around is if spectators will be able to cheer from the parks. I’m sure we will get more info as time goes on.
Which Races Are You Going To Do?
With all of these changes coming back, will you be registering for one of, or all of these races weekends? I plan to run marathon weekend to continue to keep my streak going. I will most likely register for Goofy again. However, I don’t want to miss the Princess Half Marathon weekend and the yoga experience!
