Wife Mother Runner Holiday Health Challenge

The eating season has begun!! It started on Halloween and ends after the new year. That’s why I am offering help with my Holiday Health Challenge. I know I struggle with this time of year. I have a little bit of this and a pinch of that; and next thing I know, I easily gained five pounds.

I am going to share with you how NOT to gain those pounds throughout the next two months so you can enter the year 2020 without needing to lose weight; but already having healthy habits established.

OMD – One Meal A Day For The Planet

We are also going to implement the OMD – One Meal A Day for the planet approach. It will be easy. Don’t worry. You can start with just switching one meal a day with something plant-based. I’ll share recipes and meal ideas for you to make this easy to follow. Follow #OMD4thePlanet for ideas from Oprah and Suzy Amis Cameron, and also share your photos using #WMROMD4thePlanet.

I have two great video programs for you to watch for recipe ideas. The first one is Raw. Vegan. Not Gross. The second one is The Paleo Way. Sometimes the recipes seem a bit elaborate for me; but I get ideas for things like making noodles out of carrot peels, or use beets for lasagna layers instead of pasta.

How To Start The Holiday Health Challenge

  1. This isn’t going to be hard. The first steps is for you to get in the right mindset. Do you meditate? Now is a good time to start. I use the Calm app (paid version) and love it. This is a great resource to help you get ready for your day and to set your intentions.
  2. The second thing is to register to join the program. I will share with you tips, recipe ideas and fitness suggestions to help you maintain your fitness level, curb your cravings, and learn which foods are better choices.
  3. Join my Facebook Group to share your ideas, questions, success or struggles with others!

The Benefits of Doing the Holiday Health Challenge

Know that you are doing something good for your body.

The intent of this challenge is to help you reduce inflammation in your body, consume more plant-based foods, and help save the environment. Yes, I said you can help the earth by doing this challenge. How is that? Well, by eating more plant-based foods, you are reducing your carbon footprint, and also helping reduce the impact on agriculture, as well as saving water.

Know that what you are doing will also have an impact on your family

You’d be surprised at how much your children and family members see what you do or eat and want to do what you are doing. I have been eating a cleaner diet for about 6 months now and my son told me he wants to eat healthier foods. He wants to purchase chickens that are pasture raised and non GMO. He has heard me telling people that when I purchase pre-cooked food at the grocery store, I ended up with gastrointestinal distress because those foods had been loaded with antibiotics and hormones.

Holiday Health Challenge

You don’t even have to force this new lifestyle on them. They will smell the food you are making because it is fresher and more aromatic. They will also see you enjoying your meals because they taste better.

This week I went to NYC to meet up with my friends Claudia and Shelley for the Gabby Bernstein Super Attractor book launch at the Riverside Church. We met up for dinner prior to the book launch at and then walked over to the church.

The church was gorgeous. And I couldn’t wait to hear what Gabby was going to share. I met her at my first blogging conference, Mom 2.0, in May of 2017. We sat at the same table just before she was going to give a keynote on stage. I hadn’t heard of her before then; but related to her story as soon as she started speaking.

It’s Good To Feel Good

I don’t know why I struggle with this. Why do I now allow myself to feel happy? Is it because there have been some hard times in my life? I think guilt is part of it for me. I know it is a choice to feel happy; but someone told me this summer that guilt is a useless emotion.

I deserve to feel good. I deserve to receive. Until recently, I was stuck. I kept feeling that I wasn’t deserving of the good things that come my way. That I wasn’t good enough. Sadly, it has taken a lot of time to let go of those feelings. But I think I have finally broken that pattern.

When I was with Claudia she said she had noticed that change in me. She said I looked happy. I seemed less stressed. Angie, who was one of my amazing roommates from the Oprah cruise said I was glowing in one of my photos.

So I guess I am living at a higher level of vibration since this new revelation of mine! When I am happy, I will get everything I desire.

When You Are Aligned It is THIS or SOMETHING BETTER

Whatever you put out, you will receive. If what you are doing right now doesn’t work out, it’s because there is something better out there waiting for you.

When you are aligned with the universe, you can feel happy and excited regardless of what the circumstances are because you have hope that things will work out the way they were meant to.

When I lost my job and started my business I felt positive about the outcome because I knew it was meant to be. This was my ultimate desire. I was upset only temporarily because my ego was hurt. But in the big pictures, my dream was being handed to me.

Your Fear Reveals To You What You Need To Hear!

Look at the Fear. Give it away. Do not fear your fear.

When I wanted to become self-employed, I was afraid. I didn’t pull the trigger and make it happen because that fear was holding me back. It took someone else’s actions to set me free and allow me to step out on my own because I didn’t have a choice. I had been holding on to some negative feelings about that situation, which was causing me to have negatives vibes. Because of that, I wasn’t releasing what my true potential is.

There were feelings of self-doubt that I was’t ready to talk through because I didn’t want to feel those feelings again. But I needed to get it out so I could let it go.

Fall Favorite Soup Recipes

Fall Favorite Soup Recipes

As the temps cool down, I love to heat up with my fall favorite soup recipes. One of my favorites is butternut squash. Since I can no longer have dairy or cream in my soup, I’m exploring other recipe options. I have a few to share that I found on Pinterest, and I can’t wait to make them!

Vegan Fasolatha Soup

I want to explore more with my cooking and soup recipes. Instead of the traditional butternut squash or pumpkin soup for fall, I want to try some new recipes. I came across this one and I think I’ll love it. Especially since it contains beans which are an additional source of protein. This easy recipe contains white beans, onion, carrots and tomato.

You can serve this soup up with olives, feta cheese, sausage or a nice rustic bread.

Vegan Corn Chowder

I like the idea of chowder with a twist. I love corn, especially fresh corn that was cut off the cob. To make the soup creamy you can skip the flour, cream and butter. You can use coconut flour, or a gluten-free all-purpose four, vegan butter replacement and/or coconut milk instead of cream.

To make the soup thicker, blend together one of the red potatoes along with some corn and the coconut milk.

Garnish the soup with some avocado, add some shrimp for protein or use fresh chives to top the soup.

Sweet Potato and Quinoa Stew

This recipe is a stew with cannelini beans and quinoa which is rich in nutrients. It’s easy to make in about 30 minutes. You cook everything in the pot and let add in the coconut milk and spinach in the last 5 minutes of cooking.

Vegan Chili Recipe

One of my favorite fall favorite soup recipes is a big bowl of chili! In search for a high protein, vegan recipe I turned to Pinterest and found this amazing recipe. I haven’t made a meal with tofu yet and this recipe calls for tofu in place of ground meat. I look forward to trying this and seeing how I like it, and also seeing how my body responds to the tofu instead of the meat.

It’s best to service this chili with avocado, cashew sour cream, chives and vegan cornbread. I plan on making this over the weekend!

How To Thicken Soup Without Cream or Gluten

  • Put Rice in the bottom of the bowl before you dish out and serve the soup.
  • Cut up a potato and add it to the soup, then blend it with an immersion blender.
  • Add cornstarch. Mix it with cold water before adding it to your soup, warm water causes clumps.
  • Add arrowroot. If you’re looking to avoid dairy, arrowroot is an excellent choice!
