One of my favorite weekend things to do is to take my time and make a double batch of banana oat pancakes.  I got this recipes from my 21 Day Fix Fixate Cookbook.  I have very few cookbooks that I actually use; but this one is great because it uses clean ingredients, and it’s easy for me to substitute the ingredients for my allergy needs.

Banana Oat Pancakes Are Allergy Friendly

I love this recipe because it does not use flour or dairy; and I can use an egg substitute for the eggs in the recipe and it comes out just as good!  I also add a little extra baking powder to my batch to help make the pancakes a little fluffier.

These gluten free pancakes are packed with 12g of protein per serving!  And the carbs are healthy complex carbs.  So you can have these with a lot less guilt than the traditional sugary, pancakes made with flour.

One great tip I’d recommend to you is to add all of the dry ingredients into an airtight container along with a card with the wet ingredients.  This way when you want to whip up a batch, you just need to pour everything from the container into the blender and add the bananas, milk and vanilla.  It’s super simple!

Ingredients
  

  • 1 cup unsweetened almond milk
  • 2 large eggs  (or an egg replacement - I like Bob's Red Mills egg replacer or flaxseed meal)
  • 1 large ripe banana
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 dash sea salt
  • 2 cups old-fashioned rolled oats
  • 1/2 tsp extra virgin organic coconut oil
  • 3 cups fresh mixed berries

Instructions
 

  • This recipe is SUPER easy!
  • Add all of the ingredients into a blender and blend until smooth.
  • Heat a skillet with the coconut oil to medium-low heat.
  • Pour batter into the skillet.Wait about a minute for the batter to bubble around the edges.
  • When bubbling, flip the pancakes and cook for another 90 seconds.

Freezing Your Banana Oat Pancakes

These pancakes are great to freeze and pop in your microwave for 60 seconds on each side to reheat.  I like to do this so I have easier grab-and-go healthy, gluten free options for my breakfast each day.  Whether its Bob’s Red Mill oatmeal or sausage with avocado and sweet potato puffs, I can grab something quick with no guilt.

During my journey to better health, I had a food intolerance test done with my doctor. She went over the results with me the day before I was leaving for Austin, Texas to attend the Mom 2.0 conference. So I put together 3 quick tips for traveling with food allergies.

I can no longer eat foods containing gluten, dairy or eggs. This meant I needed to pull together food quickly that I could pack to bring with me and have for snacks and breakfast in case I couldn’t find an allergy friendly option.

I am traveling again this week for the Women In Travel Summit and needed to do the same thing. I went to Target and was pleasantly surprised to find that they carried a lot of allergy free foods that will taste good and will be safe for me. They are also a lot more affordable than going to a specialty health food store.

I noticed that since eating clean foods, I am more hungry, more often because I am not as full. Since I am eating food that is good for me, my body is processing it and using it so my blood sugar is being more regulated.

I wasn’t aware of this app until I was with a tour group for a bike ride around the Maine coastline. One of the women on the tour has a gluten allergy and she shared with me the name of the app. This will be a great resource for me to find restaurants around my home and when I am away from home.

Many restaurants can accommodate for food allergies; but it is sometimes overwhelming when you have a menu in front of you with choices that are not gluten-free and your only alternative is a salad. I’d like to be able to enjoy a meal with foods that I can eat in addition to what everyone else is eating.

Pack Your Own Food

When in doubt, make sure you have your safe foods with you. I have been packing the following items in my suitcase and carry-on to have on hand in case I get hungry or can’t find an option that works for me.

I found out that airports are difficult to find foods I can eat; especially late at night. I try to grab a California roll or some fresh sushi. But on my last trip home, I had to eat the banana my roommate gave me along with some almonds. That was my dinner. Needless to say, when I got home at 2:30 a.m. I was hungry.

Read The Labels

You must be your own advocate, so make sure you ask your servers at the restaurants and read the labels of any food you purchase. Fortunately for me, I don’t have a life threatening food allergy; but if I eat foods on my “dirty foods” list, I will end up with discomfort.

I was pleasantly surprised at dinner at a Yosaku , our server heard my roommate and I talking about gluten free eating and when she served us our food, she brought gluten free soy sauce. We were so excited that she noticed our needs, and we were even more excited that we found a new gluten free soy sauce!

This new change in my diet is going to have a large impact on me; but in a positive way. I’m just learning how to navigate this new world of food. It’s a little bit of a challenge, I am hungry often; but I do feel better. My brain seems to be less foggy, I have more energy, and I feel like my mood has changed for the better. I feel less blue and more positive.

These 3 quick tips for traveling with food allergies are the start of what I am learning about having food allergies. I’ll share what I am learning and any new tips and tricks of this new lifestyle as I encounter challenges and victories!

Learning More About Gluten

When I first started learning about the whole gluten free approach it sounded like it could be pretty easy.  There are lots of great foods out there like Kind bars.  They are gluten free and delicious granola bars that you can purchase at Target without needing a home equity loan!  My mother also said that Walmart has a section with a lot of good gluten free foods.  I haven’t ventured to Walmart yet.  I try to avoid that place at all costs.

The first thing I thought of for how I would approach my day is that I could probably get away with going gluten free without even knowing it!  I could have an oatmeal for breakfast, my tea, a kind bar for a snack.  Then I could have an apple for lunch, macaroni salad (made with quinoa pasta) and for dinner I can have fish and rice and veggies.  That doesn’t sound so hard. Another option for lunch could be a large salad with hard boiled eggs or tuna.  Dinner could include a sweet potato instead of rice or include a salad as a side as well.

I think lunch would be the challenge for me after a while.  I could eat a macaroni salad with apples in it and peas for a few days; but then I’d need to come up with some other ideas.  I never mind scrambled eggs with fresh veggies baked into a baking dish like a quiche without a crust.  That’s a good choice for a good protein-rich lunch.

When thinking of what you can’t eat with gluten in it, it’s easy to focus on what you can’t have.  But there are a lot of foods that you can have.   I can make my own soup, that’s always a good choice and a good source of veggies as carbs to add to my diet with less carbohydrates.

Some easy snacks to munch on are almonds and sliced up apple.  A cheese stick with grapes.  A kind granola bar, yogurt with Kind granola.  There’s a lot of choices!  I’m just getting started researching what you should and shouldn’t eat and trying to focus on what I can eat.  But I still have more to learn.
